Traditional British Vegan Fairy Cakes!

* 225 grams [8oz] self-raising flour * 2 teaspoons baking powder * 175 grams [6oz] sugar * 6 tablespoons vegetable oil * 1 teaspoon vanilla * 225ml water [8floz] Decoration: [optional] * icing/powdered sugar * desiccated coconut * fruit jam [jelly] * little sweeties/candies * cake sprinkles

Pop the flour, baking powder, and sugar into a mixing bowl...

Step 2

Pour the water, vegetable oil and vanilla into a jug. Stir well.

Step 3

Stir until the cake batter is nice and smooth...

Step 4

Divide the batter between fairy or cupcake cases. Bake until light golden and risen...

Once baked remove from the tray and cool before decorating...

This recipe can make 16 wee fairy cakes...

So fluffy and light!

Mix powdered/icing sugar with water. Place a pat on the middle of each cake and pop a sweetie/candy on to finish. Allow the icing to set.

Decorated with thick water icing and a jelly tot sweetie... pop on any vegan candy you prefer including chocolate drops/buttons, skittles, Candy Kittens sweets, etc...

Or decorate each cake with fruit jam spread over to cover, and then dip each cake in desiccated coconut...
