The Only  fruit cake recipe you'll ever need!

Vegan Fruit  Loaf Cake

Just like Grandma baked!

Ingredients

225grams [8oz] self-raising flour [or plain/all-purpose flour with 2 teaspoons baking powder] 225grams [8oz] brown sugar 160ml 5 1/2 fl oz] plant milk  450grams [16 oz] dried fruit 130grams [ 4 1/2 oz ] apple sauce 100 grams [3 1/2 oz] margarine 1 teaspoon cinnamon powder 1 teaspoon mixed spice powder 1/4 teaspoon ground nutmeg 1/4 teaspoon ground cloves [can tailor the spices to what you have or use less or none at all!]

This vegan fruit cake recipe is perfect for Christmas, Hogmanay/New Years,Easter, Mother's and Father's Day, and any day you feel like a tasty slice of fruit cake just like the one Grandma would have baked...

Add the dried fruit, brown sugar, vegan margarine and plant milk to a pot and simmer for 10-15 minutes...

Add the apple sauce to the simmered dried fruit...

Mix the flour with the spices...

Mix the flour with the dried fruit and apple sauce mixture. Pack into a loaf pan and bake for 45-60 minutes...

Fruit loaf cake can be enjoyed warm or cooled. The cake will just get better as each day passes...

Enjoy a slice with a nice cup of tea or coffee. Also so good toasted and with vegan butter melted over, or spread with fruit jam [jelly]...
