Scotland could well be considered the capital of soups within Britain! Throughout the ages, big pots of homemade soup have been a Scottish staple, providing sustenance throughout the hard-working day. A bowl of nourishing, warm soup not only fills hungry tummies but also provides comfort during the chilly months, of which Scotland has many.
These soups are also perfect for celebrating St Andrew's Day, Robert Burns Day, Hogmanay, and New Year's Day, or for hosting a Scottish-themed dinner party.
The soups featured in this roundup include Scottish Lentil Soup, Scottish Potato and Leek Soup (with toasted oats), Scottish Hotchpotch Soup, Orcadian Oatmeal Soup, Scottish Kale and Barley Soup, Old-fashioned Scottish Potato Soup, Traditional Scotch Broth, Cock-a-leekie Soup, and Cullen Skink Soup.
Each recipe is packed with traditional Scottish ingredients like oats, barley, potatoes, and a variety of vegetables including carrots, onions, leeks, kale, and turnip (known as swede outwith Scotland).
Scottish soups are simple, humble, and frugal, yet bursting with flavour. They can be easily adapted based on the ingredients you have on hand, just as the cooks of old would have done.
These vegan adaptations of classic Scottish soups ensure that no one has to miss out on the traditional homely cooking of Scotland and it's ancestors. Whether you're looking for a hearty meal to warm up a cold day or a festive dish to serve at your next gathering, these recipes promise to deliver lots of authentic Scottish taste and wholesome satisfying goodness.
We regularly feed our family with these soup recipes, though we must admit we don't actually measure the ingredients each time we prepare them; we do it all by eye. Scottish soups are very forgiving, so you can easily use a bit more of something or a bit less of a certain ingredient, and your soup will still be delicious.

Unwanted Life
I had no idea Scotland had an affinity for soups. It wouldn't have been the first or tenth food I'd associated with Scotland. I don't think I've ever seen a soup with oats in it before either. Oats feels more like a breakfast thing. I love you side options too, as I would have only considered regular bread

In Scotland oats have long been added to puddings, desserts, biscuits, crackers, breads, cakes, drinks, and many savoury dishes such as soups, stews, haggis, sausages, rissoles, pies, and as part of gratin and hotpot toppings, and much more! Oats have been a staple for many centuries and we would be lost without them!
